Chontaduro kisses with refried Pacific in gulupa sauce


  • 5 peaches
  • ½ cup of colanta cheese
  • 1 tbsp low-fat cream cheese
  • 7 small shrimp
  • 1 small sprig of Cimarron coriander
  • 1 small branch of long onion
  • 1 tomato
  • ½ white onion
  • olive oil
  • salt and pepper to taste
  • 1 tsp garlic paste
  • ½ cup Parmesan cheese

dough preparation

We peel the chontaduros, we put them to boil until they are left to puree. Remove from the heat and add the cheese and cream cheese.

Pacific refried preparation

Devein and clean the shrimp. We put them to boil in water milk for 1 minute, remove from heat and chop finely.

Besides, we have finely chopped the vegetables to make a hogao with olive oil to which we will add the shrimp.

Mix of the two preparations

We mix the chontaduro dough with the refried Pacific to start making small balls that finish their preparation by passing them through grated Parmesan cheese.

Heat the oil and fry the chontaduro balls to finish cooking.

gulupa sauce

  • 1 gulupa
  • 1 well of water
  • 1 well of white sugar

Bring to a simmer until you have a thick sauce. 

To serve: we make a mirror of gulupa sauce and on it the chontaduro kisses. You can decorate with a flat parsley leaf. 

We suggest accompanying with a glass of chilled Chardonnay white wine.
