Lemon cake


  • 1 ½ cups flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter
  • 1 teaspoon vanilla essence
  • 1/3 cup lemon juice
  • 1/4 cup vegetable oil (not olive, sunflower or peanut)
  • Zest of 4 lemons
  • 2 tablespoons of lemon essence


  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon lemon juice


Preheat the oven to 170ºC. Grease and flour the baking dish you will use for baking. Mix in a bowl the dry ingredients: flour, baking powder, salt. In another bowl, mix the butter, eggs, sugar, vanilla and lemon zest, mix well with the mixer.

Combine both mixtures and add the oil, lemon juice and lemon essence. Place in the mold and bake in the oven for approximately 45 minutes.

While the preparation is in the oven, mix the glaze ingredients. When the cake is ready (after testing the stick), remove it to a wire rack and while it is still warm, sprinkle with the glaze mixture. let it cool very well before cutting, the glaze should harden.
